Excellent Delicious And Easy Chicken Recipes

I have found some excellent chicken recipes on the Net over the year, and I am posting a few of them here for your taste buds.

Chicken Eggroll

3-4 chicken breasts, cooked & shredded or finely diced
1/2-3/4 head green cabbage, finely shredded (can purchase pre-shredded cabbage)
2-3 cups broccoli, finely chopped
2-3 cups cauliflower, finely chopped
2-3 green onions, thinly sliced
1-2 cups carrots, shredded
1 cup potato, peeled & shredded
soy sauce, about 2 tablespoons, or to taste
black pepper, to taste
1-2 packages egg roll wrappers
vegetable oil for frying
1 egg, beaten & mixed with 1 tablespoon water

Chicken Tetrazzini

One Of My Favorite Comfort Food

tablespoon unsalted butter
Cooking spray 
1 cup finely chopped onion
2/3 cup finely chopped celery 
3/4 teaspoon freshly ground black pepper
1/4 teaspoon salt
3 (8-ounce) packages presliced mushrooms
1/2 cup dry sherry
3 ounces all-purpose flour (about 2/3 cup)
3 (14.5-ounce) cans fat-free, less-sodium chicken broth
2 1/4 cups (9 ounces) grated fresh Parmesan cheese, divided 
1/2 cup (4 ounces) 1/3-less-fat cream cheese 
7 cups hot cooked vermicelli (about 1 pound uncooked pasta)
4 cups chopped cooked chicken breast (about 1 1/2 pounds)
1 (1-ounce) slice white bread

Maple Glazed Chicken


2 tablespoons pure maple syrup
1 tablespoon reduced-sodium soy sauce
2 teaspoons lemon juice
1 clove garlic, minced
1 teaspoon minced fresh ginger
1/4 teaspoon freshly ground pepper
2 boneless, skinless chicken breasts, (about 8 ounces), trimmed and tenders removed (see Tip)

Chicken Souvlaki


1 tablespoon olive oil, divided
1 pound skinless, boneless chicken breast, thinly sliced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups vertically sliced onion (about 1 medium)
1 cup thinly sliced green bell pepper (about 1)
2 teaspoons bottled minced garlic
1/2 teaspoon dried oregano
1/2 cup grated English cucumber
1/4 cup 2% Greek-style yogurt (such as Fage)
1/4 cup reduced-fat sour cream
1 tablespoon chopped fresh flat-leaf parsley
1/2 teaspoon grated lemon rind
1 teaspoon fresh lemon juice
1/8 teaspoon salt
4 (6-inch) whole-wheat soft pitas, cut in half
2 plum tomatoes, thinly sliced

Chicken Stuffed with Golden Onions & Fontina

Recipe Ingredients:

4 teaspoons extra-virgin olive oil , divided
1 1/2 cups thinly sliced red onion
2 teaspoons minced fresh rosemary , divided
1/8 teaspoon salt
Freshly ground pepper to taste
2/3 cup shredded fontina cheese , preferably aged
4 boneless, skinless chicken breasts (about 1 pound), trimmed of fat
1/2 cup white wine
1 cup reduced-sodium chicken broth
4 teaspoons all-purpose flour

Easy And Delicious Chicken Pot Pie Recipe


1 pkg (300g) Green Giant* Frozen Mixed Vegetables (about 2½ cups)
2 cups (500 mL) chopped cooked chicken (or turkey)
1 can (10 ozfl/284mL) cream of chicken soup
1 cup (250 mL) Bisquick* mix
1/2 cup (125 mL) milk
1 egg



PAM® Original No-Stick Cooking Spray
1/2 cup Hunt's® Original Barbecue Sauce
2 cups thinly sliced small red-skinned potatoes (4 to 6 potatoes)
24 boneless skinless chicken breasts (5 oz each)
1 cup chopped green bell pepper
1/4 cup chopped onion
1/4 teaspoon ground black pepper
1/2 cup shredded reduced fat Cheddar cheese
